Black bean burger patties - no soy, gluten free vegetarian
Here is a vegetarian alternative to a burger patty, that I came up with. For a while I would just fry a couple of tomato slices for myself to use as a patty substitute, when my family was in a burger mood. Then a couple of weekends ago, I thought I would upgrade my burger experience and add some protein to that.
Black bean burger patties - gluten free, vegetarian.
1 can of organic black beans, rinsed and drained.
1/2 cup of organic corn (I used frozen, thawed)
1 egg
1/4 cup of gluten-free oat flour
1/4 cup chopped fresh cilantro
1 tsp cumin
1/2 tsp chili powder
1 tsp salt
1/2 tsp pepper
Add most of the beans and corn to a blender with the egg and blend.
Chop, chop, chop. Yes, I take a new picture of chopped herbs every time. Yes, I must, no need to post that picture every time
Pour blended beans corn, and egg into a bowl with rest of beans and corn.
Add all the rest of the ingredients.
Mix until combined.
Make six patties and fry in a skillet. I poured the mixture onto the skillet with a spoon and flattened them out a bit. Once they were fried on one side, they were pretty easy to flip with a spatula.
I fried them on both sides for a couple of minutes, until done.
Here is how I made my burger with the first one of these patties. I froze the rest of the black bean burger patties so that I can pick one out the next time we have burgers.
On a hamburger bun I added some ketchup - we like the organic ones from Sun Harvest, or Wild Harvest, then I added the patty with a couple of pieces of melted spicy Pepper Jack cheese - the cheese was added while the patty was still in the skillet so that it melted a bit.
I had fried up some onions with a bit of rosemary, which I layered on next before adding some thinly sliced tomato slices.
Then I topped off with some roasted onions (I got them at one of the Persian super markeds), then I used some Danish remoulade, which you can get here, some chopped cucumber and fresh oregano and a squeeze of lime. I served it with a side of organic baked french fries. The patties are pretty small, but still have a little over 4 grams of protein in each one.
I think that is pretty good!
